Veggie Fajitas

Origin & Story

Fajitas hail from the Tex-Mex ranch country of the Rio Grande, where ingredients were cooked over a fire and wrapped in tortillas. This veggie version keeps the sizzle.

Main Spices & Their Role

Cumin

The earthy backbone of the seasoning.

Smoked paprika

Adds smokiness and colour.

Chilli powder

For adjustable heat.

Ingredients

  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 1 courgette, sliced
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp chilli powder
  • 2 tbsp oil
  • Tortillas
  • Lime

Method

  1. 01

    Heat oil in a pan until very hot.

  2. 02

    Add the peppers, onion and courgette.

  3. 03

    Sear on high heat so they char slightly but stay crisp.

  4. 04

    Sprinkle in the spices and salt and toss.

  5. 05

    Serve sizzling with warm tortillas and lime.
