Vegetable Pulao

One-pot spiced rice cooked with mixed vegetables.

Origin & Story

Pulao is the Indian one-pot rice dish descended from Persian pilaf, a fragrant, mildly spiced meal that turns rice and a few vegetables into a complete plate.

Main Spices & Their Role

Whole garam masala

Cinnamon, cloves and cardamom perfume the rice.

Cumin

Toasted at the start for depth.

Bay leaf

Rounds out the aromatic base.

Ingredients

  • 1 cup basmati rice, soaked
  • 1 cup mixed vegetables (peas, carrot, beans)
  • 1 onion, sliced
  • 1 tsp cumin
  • Whole spices (cinnamon, cloves, cardamom)
  • 2 tbsp oil
  • 2 cups water
  • Salt

Method

    Heat oil and add the whole spices and cumin.

    Saute onion until golden, then add the vegetables.

  3. 03

    Add the drained rice and toss for a minute.

  4. 04

    Pour in water and salt, bring to a boil.

  5. 05

    Cover and simmer on low until fluffy.

This dish is already vegetarian.
