Vegetable Lo Mein

Soft tossed noodles with vegetables in a savoury sauce.

Origin & Story

Lo mein ('tossed noodles') differs from chow mein in that the noodles are boiled soft, then tossed rather than fried, a comforting take-out favourite.

Main Spices & Their Role

Ginger

Warms the aromatic base.

White pepper

Seasons the sauce.

Ingredients

  • 200g noodles
  • 1 carrot, julienned
  • 1 cup cabbage & pepper
  • 2 garlic cloves
  • 1 tsp ginger
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 tbsp oil

Method

  1. 01

    Boil the noodles until just soft; drain.

  2. 02

    Stir-fry garlic, ginger and the vegetables in hot oil.

  3. 03

    Add the noodles and soy sauce.

  4. 04

    Toss well so the noodles soak up the sauce.

  5. 05

    Finish with sesame oil and serve.
