Khichdi is one of India's oldest and most comforting dishes, a nourishing one-pot of rice and lentils that is the go-to meal when you want something wholesome and easy.

Colours the khichdi golden.

Ginger

Adds a warming lift.

Ingredients

  • 1/2 cup rice
  • 1/2 cup yellow lentils
  • 1 cup mixed vegetables
  • 1 tsp cumin
  • 1/2 tsp turmeric
  • 1 tsp grated ginger
  • 2 tbsp ghee or oil
  • Salt

Method

  1. 01

    Rinse the rice and lentils together.

  2. 02

    Heat ghee and crackle cumin with ginger.

  3. 03

    Add the vegetables, turmeric and salt.

  4. 04

    Add rice, lentils and 4 cups water.

  5. 05

    Simmer covered until soft and porridge-like.

Veg & Vegan Alternatives

Vegetarian

This dish is already vegetarian.

Vegan

Use oil instead of ghee for a fully vegan khichdi.
