Vegetable Fried Rice

A meat-free cousin of egg fried rice, vegetable fried rice is the ultimate fridge-clearing wok dish, popular across China and Chinese restaurants worldwide.

Main Spices & Their Role

White pepper

The signature warm, floral seasoning.

Ginger

A little grated ginger lifts the whole dish.

Ingredients

  • 2 cups cold cooked rice
  • 1 cup mixed veg (peas, carrot, corn)
  • 2 spring onions
  • 1 tsp grated ginger
  • 1 tbsp soy sauce
  • 1/4 tsp white pepper
  • 2 tbsp oil

Method

  1. 01

    Heat oil in a wok until hot.

  2. 02

    Stir-fry the ginger and vegetables for 2 minutes.

  3. 03

    Add the cold rice and break up any clumps.

  4. 04

    Season with soy sauce and white pepper.

  5. 05

    Toss through spring onion and serve.
