Tuscan White Bean Stew

Cannellini beans simmered with tomato, sage and garlic.

Origin & Story

Fagioli all'uccelletto is a classic Tuscan bean dish, cooked with sage and tomato. Tuscans are affectionately called 'mangiafagioli' (bean-eaters) for good reason.

Ingredients

  • 2 cans cannellini beans
  • 1 can chopped tomatoes
  • 3 garlic cloves
  • A few sage leaves
  • 4 tbsp olive oil
  • Salt & pepper

Method

  1. 01

    Warm the olive oil and gently fry the garlic and sage.

  2. 02

    Add the tomatoes and simmer 10 minutes.

  3. 03

    Tip in the beans with a little of their liquid.

  4. 04

    Simmer 10 minutes until thick and flavourful.

  5. 05

    Season and serve with crusty bread.
