Tomato Egg Stir Fry

Soft scrambled egg with sweet-tart stewed tomatoes.

Fanqie chao dan is one of the first dishes Chinese children learn to cook. It is the ultimate homey comfort food, balancing sweet, savoury and tangy notes.

Main Spices & Their Role

White pepper

A light seasoning for the eggs.

Sugar

A pinch balances the acidity of the tomatoes.

Ingredients

  • 3 eggs
  • 2 tomatoes, wedged
  • 1 spring onion
  • 1/2 tsp sugar
  • 1/4 tsp white pepper
  • 2 tbsp oil
  • Salt

Method

  1. 01

    Beat eggs with salt and white pepper.

  2. 02

    Scramble softly in hot oil and set aside.

  3. 03

    Cook tomato wedges until they release juice.

  4. 04

    Add sugar and salt, then return the eggs.

  5. 05

    Toss gently, scatter spring onion and serve.
