Sweet and sour is one of the best-known Chinese flavour profiles worldwide. This tofu version delivers the sticky, tangy glaze without any meat.

Ingredients

  • 1 block firm tofu, cubed
  • 1 bell pepper, chunks
  • 1/2 onion, chunks
  • 3 tbsp ketchup
  • 1 tbsp vinegar
  • 1 tbsp sugar
  • 1 tsp soy sauce
  • 1 tsp cornflour + water
  • 3 tbsp oil

Method

  1. 01

    Pan-fry the tofu cubes until golden and crisp; set aside.

  2. 02

    Stir-fry onion and pepper in the same pan.

  3. 03

    Mix ketchup, vinegar, sugar and soy into a sauce and add it.

  4. 04

    Return the tofu and toss to coat.

  5. 05

    Thicken with the cornflour slurry and serve with rice.
