Cong you bing is a beloved Chinese street snack. Rolling oil and spring onion into the dough creates the signature flaky layers when it hits the hot pan.

Ingredients

  • 2 cups flour
  • 3/4 cup hot water
  • 3 spring onions, chopped
  • 1/4 tsp white pepper
  • 3 tbsp oil
  • Salt

Method

  1. 01

    Mix flour with hot water to form a soft dough; rest 20 min.

  2. 02

    Roll out, brush with oil and scatter spring onion.

  3. 03

    Roll into a rope, coil it up and flatten again.

  4. 04

    Pan-fry in oil until golden and crisp on both sides.

  5. 05

    Cut into wedges and serve.
