Ingredients

  • 200g spaghetti
  • 1 lemon (zest and juice)
  • 50g grated parmesan
  • 3 tbsp olive oil
  • Reserved pasta water
  • Salt & pepper
  • Basil

Method

  1. 01

    Cook the spaghetti until al dente; reserve some water.

  2. 02

    Whisk lemon zest, juice, olive oil and cheese in a bowl.

  3. 03

    Add the hot pasta and toss, loosening with pasta water.

  4. 04

    Keep tossing until creamy and emulsified.

  5. 05

    Season and finish with basil.

Already vegetarian — use a vegetarian hard cheese.
