Spaghetti Aglio e Olio

Born in Naples, aglio e olio ('garlic and oil') is the definition of Italian frugal cooking, a satisfying midnight meal made from pantry staples in under fifteen minutes.

A final grind for sharpness.

Ingredients

  • 200g spaghetti
  • 5 garlic cloves, thinly sliced
  • 4 tbsp olive oil
  • 1/2 tsp chilli flakes
  • Salt
  • Parsley
  • Reserved pasta water

Method

  1. 01

    Boil spaghetti in salted water until al dente; reserve a cup of water.

  2. 02

    Gently warm olive oil and slice garlic until pale gold.

  3. 03

    Add chilli flakes and a splash of pasta water.

  4. 04

    Toss in the drained pasta and emulsify with more water.

  5. 05

    Finish with parsley and serve immediately.
