Sopa de fideo is a comforting Mexican noodle soup and a childhood favourite, made by toasting thin noodles then simmering them in a garlicky tomato broth.

Ingredients
- 1 cup fideo or vermicelli noodles
- 2 tomatoes, pureed
- 1/2 onion
- 1 garlic clove
- 1/4 tsp cumin
- 3 cups stock
- 2 tbsp oil
- Coriander & lime
Method

Toast the noodles in oil until golden brown.

Add the tomato puree, onion, garlic and cumin.

Cook until the puree thickens.

Pour in the stock and simmer until the noodles are soft.

Finish with coriander and a squeeze of lime.
