Origin & Story

Salsa fresca (or pico de gallo) is the fresh, uncooked salsa of Mexico, its name meaning 'rooster's beak'. Paired with simple rice it makes a light, refreshing meal.

Chilli

Fresh jalapeno or serrano for bright heat.

Cumin

Seasons the rice with warmth.

Ingredients

  • 1 cup cooked rice
  • 3 tomatoes, diced
  • 1/2 onion, minced
  • 1 chilli, minced
  • Lime juice
  • 1/4 tsp cumin
  • Coriander
  • Salt

Method

  1. 01

    Combine tomato, onion, chilli, lime and coriander for the salsa.

    Season with salt and let it sit 10 minutes.

  3. 03

    Warm the rice with a pinch of cumin.

  4. 04

    Plate the rice and spoon salsa over the top.

  5. 05

    Finish with extra lime and serve.
