Creamy mashed beans over rice with fresh, colourful toppings.

Origin & Story

Frijoles refritos ('well-fried beans') are a cornerstone of Mexican cuisine. Beans are simmered, then mashed and fried for a rich, creamy base that stretches a tiny budget a long way.

Main Spices & Their Role

Cumin

The defining warm, earthy note of the beans.

Chilli powder

Adds gentle heat and colour.

Ingredients

  • 1 can beans
  • 1 cup cooked rice
  • 1/2 tsp cumin
  • 1/4 tsp chilli powder
  • 1/2 onion
  • 2 tbsp oil
  • Tomato, coriander & lime to top

Method

  1. 01

    Saute onion in oil, then add the spices.

  2. 02

    Add beans with their liquid and mash to a rough paste.

  3. 03

    Cook until thick and creamy, seasoning with salt.

  4. 04

    Spoon over a bowl of warm rice.

  5. 05

    Top with tomato, coriander and a squeeze of lime.

Vegetarian

This dish is already vegetarian.

Vegan

Already vegan — traditionally lard is used, so cook the beans in oil (as here) to keep them plant-based.
