Rajas con crema ('strips with cream') is a rich Mexican dish of roasted poblano peppers folded into cream and corn, delicious in tacos or over rice.

Ingredients

  • 3 poblano peppers
  • 1 onion, sliced
  • 1 cup corn
  • 1/2 cup cream
  • 1 garlic clove
  • 2 tbsp oil
  • Salt

Method

  1. 01

    Char the poblanos, peel and slice into strips.

    Saute onion and garlic in oil until soft.

  3. 03

    Add the poblano strips and corn.

  4. 04

    Stir in the cream and warm gently (do not boil).

  5. 05

    Season and serve with warm tortillas or rice.
