Polenta has been northern Italy's staple for centuries, a humble bowl of slow-cooked cornmeal that turns creamy and comforting, served soft or set and grilled.

An optional warming pinch.

Ingredients

  • 1 cup coarse polenta (cornmeal)
  • 4 cups water or stock
  • 2 tbsp butter or oil
  • Grated parmesan
  • Salt & pepper

Method

    Bring the water and salt to a gentle boil.

    Slowly pour in the polenta, whisking to avoid lumps.

  3. 03

    Cook on low, stirring often, for 25-30 minutes until thick and creamy.

    Stir in butter and parmesan.

    Season and serve soft with your favourite topping.
