Pasta Primavera

Pasta primavera ('spring pasta') celebrates fresh seasonal vegetables in a light garlic-and-oil toss, a colourful, healthy plate that's easy on the budget.

Main Spices & Their Role

Black pepper

Simple seasoning.

Chilli flakes

An optional pinch of heat.

Ingredients

  • 200g pasta
  • 1 courgette, sliced
  • 1 bell pepper, sliced
  • Handful peas
  • 2 garlic cloves
  • 3 tbsp olive oil
  • Lemon zest
  • Salt & pepper
  • Basil

Method

  1. 01

    Cook the pasta until al dente; reserve some water.

  2. 02

    Saute garlic then the vegetables in olive oil until just tender.

  3. 03

    Add the pasta with a splash of the reserved water.

  4. 04

    Toss with lemon zest, salt and pepper.

  5. 05

    Finish with basil and serve.
