Pasta e fagioli ('pasta and beans') is a classic peasant dish found all over Italy, a nourishing one-pot that costs almost nothing to make.

Rosemary

Black pepper

Adds warmth.

Ingredients

  • 150g short pasta
  • 1 can borlotti or cannellini beans
  • 1 onion, chopped
  • 1 carrot, diced
  • 1 tbsp tomato paste
  • 1 sprig rosemary
  • 3 tbsp olive oil
  • Salt & pepper

Method

  1. 01

    Saute onion and carrot in olive oil until soft.

  2. 02

    Stir in tomato paste and rosemary.

  3. 03

    Add the beans and enough water to make a broth; simmer 10 minutes.

  4. 04

    Cook the pasta directly in the soup until tender.

  5. 05

    Season and serve with a drizzle of olive oil.
