Pasta Aglione

Tuscan garlic-and-tomato pasta with a mellow, roasted sweetness.

Origin & Story

From the Val di Chiana in Tuscany, aglione is a rustic sauce built on a large, sweet local garlic. It is traditionally paired with hand-rolled pici pasta.

Chilli flakes

A pinch of heat to lift the sweet garlic.

Black pepper

Balances the tomato base.

Ingredients

  • 200g pasta
  • 6 garlic cloves, sliced
  • 1 can chopped tomatoes
  • 1/2 tsp chilli flakes
  • 3 tbsp olive oil
  • Salt
  • Parsley

Method

  1. 01

    Boil pasta until al dente.

  2. 02

    Slowly cook garlic in olive oil until soft and sweet.

  3. 03

    Add chilli flakes and tomatoes; simmer 15 minutes.

  4. 04

    Season and toss with the drained pasta.

  5. 05

    Finish with parsley and olive oil.
