Ingredients

  • 3 potatoes, diced
  • 2 poblano peppers
  • 1 onion, sliced
  • 1/4 tsp cumin
  • 2 tbsp oil
  • Salt
  • Coriander

Method

  1. 01

    Char the poblanos, peel and slice into strips.

    Saute the diced potato in oil until golden and tender.

  3. 03

    Add the onion and cook until soft.

  4. 04

    Stir in the poblano strips and cumin.

  5. 05

    Season and finish with coriander; serve in tacos or as a side.
