Tuscan bread salad with juicy tomatoes and a sharp dressing.

Origin & Story

Panzanella is a Tuscan summer salad invented to use up stale bread, soaked in tomato juices and vinegar so nothing goes to waste.

Adds a herby lift.

Ingredients

  • 3 cups stale bread, cubed
  • 3 tomatoes, chopped
  • 1/2 red onion, sliced
  • Cucumber, chopped
  • Fresh basil
  • 3 tbsp olive oil
  • 1 tbsp vinegar
  • Salt & pepper

Method

  1. 01

    Toast the bread cubes in a dry pan until crisp.

  2. 02

    Combine tomato, onion, cucumber and basil in a bowl.

  3. 03

    Whisk olive oil, vinegar, salt and pepper.

  4. 04

    Toss the bread through the vegetables and dressing.

  5. 05

    Let it sit 10 minutes so the bread softens, then serve.
