Origin & Story

Molletes are a simple, satisfying Mexican open-faced snack: split rolls spread with refried beans and cheese, toasted until melty and topped with fresh salsa.

Main Spices & Their Role

Cumin

Warms the refried beans.

Chilli

Adds heat via the fresh salsa topping.

Ingredients

  • 2 bread rolls, halved
  • 1 cup refried beans
  • 1 cup grated cheese
  • 1/4 tsp cumin
  • Pico de gallo (tomato, onion, chilli)
  • 1 tbsp oil

Method

  1. 01

    Warm the refried beans with cumin and salt.

  2. 02

    Spread the beans over the halved rolls.

  3. 03

    Top generously with grated cheese.

  4. 04

    Toast in a covered pan until the cheese melts.

  5. 05

    Spoon fresh pico de gallo over and serve.

Veg & Vegan Alternatives

Vegetarian

Already vegetarian — use a vegetarian cheese.

Vegan

Use plant-based cheese and ensure the refried beans are cooked in oil, not lard.
