Minestrone is Italy's classic 'big soup', a thrifty, ever-changing pot of seasonal vegetables, beans and a little pasta that has fed families for centuries.

Ingredients

  • 1 onion, carrot & celery, diced
  • 1 can chopped tomatoes
  • 1 can beans
  • Handful small pasta
  • 2 garlic cloves
  • 1 bay leaf
  • 3 tbsp olive oil
  • Salt & pepper

Method

  1. 01

    Saute onion, carrot, celery and garlic in olive oil.

  2. 02

    Add tomatoes, bay leaf and enough water to make a broth.

  3. 03

    Simmer 15 minutes, then add the beans.

  4. 04

    Cook the pasta directly in the soup until tender.

  5. 05

    Season and serve with olive oil.

This dish is already vegetarian.
