Origin & Story

Migas is a much-loved Mexican breakfast for using up stale tortillas, tossing crisp strips into softly scrambled eggs with tomato and chilli.

Main Spices & Their Role

Chilli

Fresh jalapeno for gentle heat.

Cumin

Adds an earthy warmth.

Ingredients

  • 3 eggs
  • 2 tortillas, cut in strips
  • 1 tomato, diced
  • 1/2 onion
  • 1 chilli
  • 1/4 tsp cumin
  • 2 tbsp oil
  • Salt
  • Coriander

Method

  1. 01

    Fry the tortilla strips in oil until crisp; set most aside.

  2. 02

    Soften onion, chilli and tomato with cumin.

  3. 03

    Pour in the beaten eggs and scramble softly.

  4. 04

    Fold in the crispy tortilla strips.

  5. 05

    Garnish with coriander and serve.

Already vegetarian for egg-eaters.
