Found at every Indian breakfast cart and railway platform, the masala omelette is the country's answer to a quick, protein-rich meal, given personality by chopped green chilli and coriander.

Turmeric

Lends colour and an earthy base note.

Green chilli

Fresh, sharp heat folded through the eggs.

Black pepper

Rounds out the savoury flavour.

Ingredients

  • 3 eggs
  • 1 small onion, chopped
  • 1 green chilli, minced
  • 1/4 tsp turmeric
  • Pinch of black pepper
  • 1 tbsp oil
  • Salt
  • Coriander

Method

  1. 01

    Whisk eggs with turmeric, pepper and salt.

  2. 02

    Stir in onion, chilli and coriander.

  3. 03

    Heat oil in a pan and pour in the mixture.

  4. 04

    Cook on low until the base sets, then flip.

  5. 05

    Fold and serve with toast or bread.

Already vegetarian for egg-eaters.

Vegan

Make a vegan besan (chickpea flour) omelette: whisk 1 cup besan with water, the same onion, chilli and spices, then pan-fry like a pancake.
