Loaded Nachos

Crunchy tortilla chips piled with beans, cheese and salsa.

Origin & Story

Nachos were invented in 1940s Piedras Negras, Mexico, by Ignacio 'Nacho' Anaya, who topped tortilla chips with cheese for hungry guests. They became a global favourite.

Cumin

Seasons the beans.

Chilli powder

Brings smoky heat.

Ingredients

  • 1 large bag tortilla chips
  • 1 can beans
  • 1 cup grated cheese
  • 1/2 tsp cumin
  • 1/4 tsp chilli powder
  • Salsa, jalapenos
  • Coriander

Method

  1. 01

    Warm the beans with cumin, chilli powder and salt.

  2. 02

    Spread the tortilla chips on a pan or tray.

  3. 03

    Scatter over the beans and grated cheese.

  4. 04

    Cover the pan on low heat until the cheese melts.

  5. 05

    Top with salsa, jalapenos and coriander.

Veg & Vegan Alternatives

Vegetarian

Already vegetarian — use a vegetarian cheese.

Vegan

Use plant-based cheese (or a cashew queso) and pile on guacamole and salsa.
