Chilled Italian rice salad with crunchy vegetables.

Origin & Story

Insalata di riso is the Italian summer picnic staple, a cold rice salad packed with whatever crisp vegetables and pickles are around.

Ingredients

  • 1.5 cups cooked rice, cooled
  • 1 bell pepper, diced
  • Handful peas & corn
  • Cherry tomatoes, halved
  • Olives
  • 3 tbsp olive oil
  • Lemon juice
  • Salt & pepper

Method

  1. 01

    Cook and cool the rice completely.

  2. 02

    Chop all the vegetables into small even pieces.

  3. 03

    Combine rice, vegetables and olives in a bowl.

  4. 04

    Dress with olive oil, lemon, salt and pepper.

  5. 05

    Chill for 20 minutes and serve cold.
