Insalata di riso is the Italian summer picnic staple, a cold rice salad packed with whatever crisp vegetables and pickles are around.

Ingredients
- 1.5 cups cooked rice, cooled
- 1 bell pepper, diced
- Handful peas & corn
- Cherry tomatoes, halved
- Olives
- 3 tbsp olive oil
- Lemon juice
- Salt & pepper
Method

Cook and cool the rice completely.

Chop all the vegetables into small even pieces.

Combine rice, vegetables and olives in a bowl.

Dress with olive oil, lemon, salt and pepper.

Chill for 20 minutes and serve cold.
