Fried eggs over tortillas smothered in warm tomato-chilli salsa.

Origin & Story

Huevos rancheros ('ranch-style eggs') was the hearty mid-morning meal of Mexican farm workers, built to fuel a long day in the fields.

Main Spices & Their Role

Cumin

Deepens the tomato salsa.

Chilli

Fresh or dried, it brings the signature heat.

Ingredients

  • 2 eggs
  • 2 tortillas
  • 2 tomatoes, chopped
  • 1 chilli, minced
  • 1/2 tsp cumin
  • 1/2 onion
  • 2 tbsp oil
  • Salt

Method

  1. 01

    Cook onion, chilli, tomato and cumin into a quick salsa.

  2. 02

    Warm the tortillas in a dry pan.

  3. 03

    Fry the eggs sunny-side up.

  4. 04

    Lay eggs on the tortillas.

  5. 05

    Spoon the warm salsa over and serve.

Already vegetarian for egg-eaters.

Top the salsa-covered tortillas with pan-fried seasoned tofu 'scramble' instead of the fried eggs.
