Garlic Noodles

Simple noodles glossed in a punchy garlic-soy butter sauce.

A modern Chinese-American favourite, garlic noodles were popularised in San Francisco. They pack maximum garlic flavour into a dish that costs next to nothing.

Garlic

Used generously as the dominant flavour.

White pepper

A gentle finishing heat.

Ingredients

  • 200g noodles
  • 6 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp butter or oil
  • 1 tsp sugar
  • 1/4 tsp white pepper
  • Spring onion

Method

  1. 01

    Cook the noodles and drain.

    Gently fry the minced garlic in butter until fragrant.

  3. 03

    Add soy sauce, sugar and white pepper.

  4. 04

    Toss the noodles through the sauce.

  5. 05

    Top with spring onion and serve.

This dish is already vegetarian.

Use oil or vegan butter instead of dairy butter and choose egg-free noodles.
