Frittata
An open-faced Italian egg omelette packed with vegetables.
Origin & Story
The frittata is Italy's thrifty egg dish, designed to use up odds and ends of vegetables and cheese. Unlike a French omelette, it is cooked slowly and served in wedges.

Oregano or thyme add gentle aroma.
Ingredients
- 5 eggs
- 1 onion, sliced
- 1 courgette or potato, diced
- Handful grated cheese
- 2 tbsp olive oil
- Salt & pepper
- Herbs
Method
- 01
Saute onion and vegetables in an oven-safe pan until tender.

Whisk eggs with salt, pepper and cheese.

Pour eggs over the vegetables and cook on low.

When almost set, finish under a grill or covered lid.

Slide out and slice into wedges.
Veg & Vegan Alternatives
Vegetarian
Already vegetarian — simply leave out any meat and use a vegetarian cheese.
Vegan
Make a chickpea-flour (besan) frittata: whisk 1 cup chickpea flour with 1 cup water, season, add the vegetables and pan-bake until set.
