Origin & Story

Enfrijoladas are a humble Mexican breakfast or supper, folded tortillas dipped in a silky pureed bean sauce — comfort food that uses the cheapest of pantry staples.

Main Spices & Their Role

Cumin

Deepens the bean sauce.

Chilli

A dried or fresh chilli warms the sauce.

Garlic

Builds the savoury base.

Ingredients

  • 6 tortillas
  • 1 can black beans
  • 1 garlic clove
  • 1/2 onion
  • 1/2 tsp cumin
  • 1 chilli
  • 2 tbsp oil
  • Onion, coriander & cheese to top
  • Salt

Method

  1. 01

    Blend the beans with garlic, cumin, chilli and a little water until smooth.

  2. 02

    Warm the puree in an oiled pan until it thickens into a sauce.

  3. 03

    Quickly dip each tortilla in the warm sauce to coat.

  4. 04

    Fold the coated tortillas onto a plate.

  5. 05

    Spoon over extra sauce and top with onion, coriander and cheese.

Veg & Vegan Alternatives

Vegetarian

Already vegetarian — use a vegetarian cheese on top.

Vegan

Skip the cheese or use plant-based cheese; the bean sauce itself is fully vegan.
