Boiled eggs simmered in a spiced onion-tomato gravy.

Egg curry (anda curry) is a protein-rich favourite across India, a budget-friendly way to turn a few eggs into a rich, satisfying meal with rice.

Main Spices & Their Role

Cumin

Starts the gravy with an earthy base.

Turmeric

Colours the sauce and the eggs.

Garam masala

A warming finish.

Ingredients

  • 4 boiled eggs
  • 2 onions, chopped
  • 2 tomatoes, pureed
  • 1 tsp cumin
  • 1/2 tsp turmeric
  • 1/2 tsp garam masala
  • 1 tsp ginger-garlic paste
  • 3 tbsp oil
  • Salt

Method

  1. 01

    Fry the boiled eggs lightly in oil until golden; set aside.

  2. 02

    In the same pan cook cumin, onion and ginger-garlic until golden.

  3. 03

    Add tomato puree, turmeric and salt; cook until thick.

  4. 04

    Add water for gravy and return the eggs.

  5. 05

    Simmer 8 minutes, finish with garam masala.

Veg & Vegan Alternatives

Vegetarian

Already vegetarian for egg-eaters.

Vegan

Replace the eggs with pan-fried firm tofu or boiled potato halves simmered in the same gravy.
