Egg Bhurji

Indian-style scrambled eggs with tomato, onion and spices.

Origin & Story

Egg bhurji is Mumbai street-food royalty, cooked to order on giant flat tavas and scooped up with pav (bread rolls). It turns a few eggs into a satisfying, spicy scramble.

Main Spices & Their Role

Cumin

Adds a warm, toasty backbone.

Turmeric

Colours the eggs a rich yellow.

Garam masala

A finishing pinch for fragrant depth.

Ingredients

  • 3 eggs
  • 1 onion, finely chopped
  • 1 tomato, chopped
  • 1/2 tsp cumin
  • 1/4 tsp turmeric
  • 1/4 tsp garam masala
  • 2 tbsp oil
  • Salt

Method

  1. 01

    Heat oil, add cumin and let it crackle.

    Saute onion until soft, then add tomato and spices.

  3. 03

    Cook until the tomato breaks down.

  4. 04

    Pour in beaten eggs and scramble on medium heat.

  5. 05

    Finish with garam masala and coriander.

Veg & Vegan Alternatives

Vegetarian

Already vegetarian for egg-eaters.

Vegan

For tofu bhurji, crumble firm tofu in place of the eggs and add a pinch of turmeric plus a splash of water for colour and moisture.
