Dry-Fried Green Beans

Blistered green beans tossed with garlic and soy.

Origin & Story

Gan bian si ji dou is a Sichuan classic where green beans are dry-fried until blistered and wrinkled, concentrating their flavour before a punchy garlic toss.

The dominant aromatic.

Chilli

Dried chilli adds a warm heat.

Ingredients

  • 300g green beans, trimmed
  • 3 garlic cloves, minced
  • 1 dried chilli
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 2 tbsp oil
  • Salt

Method

  1. 01

    Heat oil in a wok and add the green beans.

  2. 02

    Dry-fry on high heat until the skins blister and wrinkle.

  3. 03

    Add garlic and chilli and toss until fragrant.

  4. 04

    Season with soy sauce, sugar and salt.

  5. 05

    Toss for a minute more and serve.
