Curd Rice

Cooling yoghurt rice with a fragrant mustard tempering.

Origin & Story

Curd rice (thayir sadam) is a soothing South Indian staple, especially in Tamil Nadu, eaten to cool the body and round off a spicy meal.

Mustard seeds

Popped in oil for the tempering.

Curry leaves

Add a fragrant, savoury note.

Ginger

A little grated ginger for warmth.

Ingredients

  • 2 cups cooked rice, cooled
  • 1 cup yoghurt
  • 1 tsp mustard seeds
  • 8 curry leaves
  • 1 green chilli
  • 1 tsp ginger
  • 1 tbsp oil
  • Salt

Method

  1. 01

    Mash the cooled rice lightly and mix in the yoghurt and salt.

    Heat oil and pop mustard seeds with curry leaves, chilli and ginger.

  3. 03

    Pour the tempering over the curd rice.

  4. 04

    Stir gently to combine.

  5. 05

    Serve chilled or at room temperature.

Veg & Vegan Alternatives

Vegetarian

This dish is already vegetarian.

Vegan

Use a plant-based (coconut or soy) yoghurt in place of dairy curd.
