This bright Mexican-style salad combines sweet corn and black beans with a zingy lime dressing, a cheap, no-cook dish full of colour and crunch.

A pinch for earthy warmth in the dressing.

Ingredients

  • 1 cup corn
  • 1 can black beans
  • 1 tomato, diced
  • 1/2 red onion
  • 1 chilli
  • Lime juice
  • 1/4 tsp cumin
  • Coriander
  • Salt

Method

  1. 01

    Combine the corn, beans, tomato and onion in a bowl.

    Add the minced chilli and coriander.

  3. 03

    Whisk lime juice, cumin and salt for the dressing.

    Toss everything together.

  5. 05

    Chill for 10 minutes and serve.
