Origin & Story

Congee is the ultimate Chinese comfort food and breakfast staple, a slow-simmered rice porridge eaten across Asia and endlessly customised with toppings.

Main Spices & Their Role

Ginger

Simmered in for a warming, soothing base.

White pepper

The traditional finishing seasoning.

Ingredients

  • 1/2 cup rice
  • 6 cups water or stock
  • 1 tsp grated ginger
  • 1/4 tsp white pepper
  • Salt
  • Spring onion & soy sauce to top
  • Sesame oil

Method

  1. 01

    Rinse the rice and add to a pot with the water and ginger.

  2. 02

    Bring to a boil, then simmer on low, stirring occasionally.

  3. 03

    Cook 40 minutes until the grains break down and it turns creamy.

  4. 04

    Season with salt and white pepper.

  5. 05

    Top with spring onion, soy sauce and sesame oil.

Vegetarian

Already vegetarian — use water or vegetable stock as the base.

Vegan

Already vegetarian and vegan — cook in oil (not ghee/butter) to keep it fully plant-based.
