Chilaquiles

Crispy tortilla chips simmered in salsa, topped with a fried egg.

Origin & Story

Chilaquiles are the classic Mexican breakfast for using up stale tortillas. The name comes from Nahuatl, meaning 'chillies and greens', and every region has its own version.

Chilli

The base of the simmering salsa.

Cumin

Adds earthy depth to the sauce.

Ingredients

  • 4 handfuls tortilla chips
  • 2 tomatoes
  • 1 chilli
  • 1/2 onion
  • 1/4 tsp cumin
  • 1 egg
  • 2 tbsp oil
  • Cheese & coriander

Method

  1. 01

    Blend or cook tomato, chilli, onion and cumin into a salsa.

  2. 02

    Simmer the salsa in a pan for 5 minutes.

  3. 03

    Fold in the tortilla chips just until coated.

  4. 04

    Top with a fried egg, cheese and coriander.

  5. 05

    Serve immediately while the chips are still slightly crisp.

Veg & Vegan Alternatives

Vegetarian

Already vegetarian — use a vegetarian cheese and keep the egg for egg-eaters.

Vegan

Skip the egg and cheese; top with avocado, sliced onion and a drizzle of plant-based cream instead.
