Cheese Quesadilla

Crispy folded tortilla with a molten cheese centre.

Origin & Story

The quesadilla dates back to colonial Mexico, where wheat and corn tortillas were folded around local cheese and cooked on a hot comal. It remains the ultimate quick snack.

Main Spices & Their Role

Cumin

A pinch adds warmth to the filling.

Chilli powder

Optional smoky heat.

Ingredients

  • 2 tortillas
  • 1 cup grated cheese
  • 1/4 tsp cumin
  • Pinch chilli powder
  • 1 tsp oil
  • Salsa to serve

Method

  1. 01

    Heat a dry pan on medium.

  2. 02

    Place a tortilla down and scatter cheese and spices over half.

  3. 03

    Fold over and press gently.

  4. 04

    Cook until golden and the cheese melts, flipping once.

  5. 05

    Slice into wedges and serve with salsa.

Veg & Vegan Alternatives

Vegetarian

Already vegetarian — use a vegetarian cheese.

Vegan

Use plant-based cheese, or mash spiced black beans and avocado as the filling instead of cheese.
