Named after the island of Capri, this salad mirrors the colours of the Italian flag. It is a no-cook celebration of peak-summer tomatoes and fresh mozzarella.

Ingredients
- 2 large tomatoes, sliced
- 1 ball mozzarella, sliced
- Fresh basil leaves
- 3 tbsp olive oil
- Sea salt & pepper
Method

Slice tomatoes and mozzarella into even rounds.

Arrange them alternately on a plate.

Tuck basil leaves between the slices.

Drizzle generously with olive oil.
