Origin & Story

Calabacitas ('little squashes') is a homey Mexican vegetable dish combining summer squash, corn and tomato, a cheap and colourful way to eat your vegetables.

Main Spices & Their Role

Cumin

Adds earthy warmth.

Chilli

Fresh or powdered for a mild kick.

Ingredients

  • 2 courgettes, diced
  • 1 cup corn
  • 1 tomato, chopped
  • 1/2 onion
  • 1 garlic clove
  • 1/2 tsp cumin
  • 2 tbsp oil
  • Salt
  • Coriander

Method

  1. 01

    Saute onion and garlic in oil until soft.

  2. 02

    Add the courgette and cook 4 minutes.

  3. 03

    Stir in corn, tomato and cumin.

  4. 04

    Cover and cook until the courgette is tender.

  5. 05

    Season, garnish with coriander and serve.

This dish is already vegetarian.

Vegan
