Bhindi Fry

Crisp pan-fried okra with a light dusting of dry spices.

Origin & Story

Bhindi fry is a beloved dry vegetable side across India. The trick, passed down in home kitchens, is to keep the okra dry and cook it uncovered so it turns crisp rather than slimy.

Main Spices & Their Role

Coriander powder

Adds a citrusy, mildly sweet earthiness.

Red chilli powder

For colour and gentle heat.

Amchur (dry mango)

A tangy finishing note (optional).

Ingredients

  • 400g okra, sliced
  • 1 tsp coriander powder
  • 1/2 tsp chilli powder
  • 1/2 tsp amchur
  • 1/4 tsp turmeric
  • 3 tbsp oil
  • Salt

Method

  1. 01

    Wash and thoroughly dry the okra, then slice.

  2. 02

    Heat oil in a wide pan and add the okra.

  3. 03

    Fry on medium heat, stirring occasionally, for 8-10 minutes.

    Sprinkle in the spices and salt.

  5. 05

    Cook uncovered until crisp and serve.
