Bean & Cheese Burrito

A big tortilla rolled around spiced beans, rice and cheese.

Origin & Story

The burrito ('little donkey') comes from northern Mexico, where a whole meal is wrapped in a large flour tortilla for a portable, satisfying feast.

Cumin

Seasons the beans.

Chilli powder

Adds warmth and colour.

Ingredients

  • 2 large tortillas
  • 1 can beans
  • 1 cup cooked rice
  • 1/2 cup grated cheese
  • 1/2 tsp cumin
  • 1/4 tsp chilli powder
  • Salsa
  • 2 tbsp oil

Method

  1. 01

    Warm the beans with oil, cumin, chilli powder and salt; mash lightly.

  2. 02

    Warm the tortillas so they fold without cracking.

  3. 03

    Layer beans, rice, cheese and salsa down the centre.

  4. 04

    Fold in the sides and roll up tightly.

  5. 05

    Toast the burrito seam-side down in a dry pan until golden.

Veg & Vegan Alternatives

Vegetarian

Already vegetarian — use a vegetarian cheese.

Vegan

Leave out the cheese or use plant-based cheese, and add extra beans, salsa and avocado.
