Aloo Matar

Potatoes and green peas in a light spiced tomato gravy.

Origin & Story

Aloo matar ('potato-peas') is an everyday North Indian curry, quick and cheap, made whenever fresh or frozen peas are on hand.

Main Spices & Their Role

Cumin

Bloomed in oil to open the dish.

Coriander powder

Builds the earthy gravy.

Garam masala

A fragrant finishing touch.

Ingredients

  • 2 potatoes, cubed
  • 1 cup peas
  • 1 onion, chopped
  • 2 tomatoes, pureed
  • 1 tsp cumin
  • 1 tsp coriander powder
  • 1/4 tsp garam masala
  • 2 tbsp oil
  • Salt

Method

  1. 01

    Heat oil and crackle the cumin.

    Saute onion until golden, then add tomato puree and coriander powder.

  3. 03

    Cook until thick, then add potatoes, peas and salt.

  4. 04

    Add water and simmer covered until the potatoes are tender.

  5. 05

    Finish with garam masala and coriander.
