A classic North Indian dry curry, aloo gobi ('potato-cauliflower') is a homely staple loved for its simplicity and the way the spices cling to the tender vegetables.

Turmeric

Colours the vegetables golden.

Cumin

Bloomed at the start for an earthy base.

Garam masala

A finishing pinch for warmth.

Ingredients

  • 2 potatoes, cubed
  • 1/2 cauliflower, florets
  • 1 tsp cumin
  • 1/2 tsp turmeric
  • 1/2 tsp chilli powder
  • 1/4 tsp garam masala
  • 3 tbsp oil
  • Salt
  • Coriander

Method

  1. 01

    Heat oil and crackle the cumin seeds.

    Add potatoes and cauliflower with turmeric, chilli and salt.

  3. 03

    Toss to coat, then cover and cook on low, stirring occasionally.

    Cook 15-18 minutes until tender and lightly browned.

  5. 05

    Finish with garam masala and coriander.
